Spring has sprung early!!! We are out on the roads! 7th line and Torrence barrens are dry and in great shape for riding! We have started our shop rides on the roads when weather permits. Bethune has a very nice new paved shoulder, making the start of our rides much safer. My favorite recipe of the spring is Tahini cookies;
Ingredients
- 3/4 cup tahini
- 1 cup honey
- 1 teaspoon ground cinnamon
- 3 cups quick cooking oats
- 1 cup chopped walnuts(I use pumpkin seeds, raisins, cranberries to mix it up)
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, stir together the tahini, honey and cinnamon. Mix in walnuts and oats until well blended. Drop by teaspoonfuls onto the prepared cookie sheets. Cookies should be about 2 inches apart.
- Bake for 10 minutes in the preheated oven, or until edges are slightly brown. Cool on the baking sheet for a few minutes before removing to wire racks to cool completely.
